Happy Birthday Pearsons Candy Company

We just love the Salted Nut Roll and the Nut Goodie. Here’s a way to make the Nut goodie Bars at home:

NUT GOODIE BARS

6 oz. chocolate chips
6 oz. butterscotch chips
3/4 to 1 c. peanut butter
1/2 c. butter
1/4 c. milk or cream
2 tbsp. vanilla pudding (not instant)
3 c. powdered sugar
1/2 tsp. maple flavoring
1/2 lb. Spanish peanuts
In top of double boiler, melt chocolate chips, butterscotch chips, and peanut butter. Grease 9×13 pan. Put 1/2 mixture in pan and set in refrigerator.In saucepan melt butter, milk, and vanilla pudding. Cook just barely until it starts to thicken. Remove from heat and add powdered sugar and maple flavoring. Mixture will be very thick.

Spread over chilled chocolate. Add Spanish peanuts to rest of chocolate mixture in double boiler and spread over filling. Chill several hours. Store in refrigerator. Tastes just like a Nut Goodie candy bar! Can add additional layers, too.

Pam’s Chicken Dried Cherry Pasta Salad

Just love this pasta salad. LAtely I’ve also been mixing in a bag of mixed greens, it adds some great color and stretches the recipe even more! Enjoy!

CHICKEN CHERRY PASTA SALAD

1 T vegetable oil

2.25 lbs chicken chunks (4 cups)

Cook chicken chunks and cool.

(I usually use canned chicken these days or the frozen cooked chunks, but fresh is really good too, depends on how much time you want to spend.)

1 16 oz pkg. Penne pasta

¾ cup diced celery

¾ cup chopped red onion

1 (5 oz) pkg dried cherries (I use craisins, less expensive)

1 ¼ c Miracle Whip Light

1 ¼ c Poppy seed dressing (usually equals one bottle)

1 ½ tsp salt

¼ tsp pepper

1 cup toasted slivered almonds

Cook pasta, rinse with cold water. Combine Chicken, pasta, celery, onion and craisins/cherries

Separately mix mayo, poppy seed dressing, S & P. Fold 1 ¾ cups dressing into salad. Reserve ¾ cup to moisten salad with later.

Top or serve with toasted almonds (don’t skip this, it’s the best part!!)

Irony is a funny thing. Animal Humane Society recently took in a dog named Lucky who fell into a bit of bad luck. At 14 years old, this miniature poodle found himself without a home after 14 years in his previous home. His owners were moving and he was not allowed to join them.

 

But that brief moment of bad luck is over for Lucky and he is ready to live up to his name again. He’s looking toward the future and being settled in with a new family in the coming days, preferably with kids and maybe a cat or two.

 

At his old age, Lucky will probably transition well into his new home. He won’t need much training, if any, just direction to get acclimated to his new home. Plus, poodles shed very little so there’s no cause for concern with regard to allergies.

 

That little known fact about poodles is something your child could learn at Animal Humane Society’s summer camp. Unleashed is an animal-themed summer day camp held at all five of Animal Humane Society’s facilities. Unleashed campers entering grades 3-12 spend a full week immersed in animal learning and fun. Each week includes animal-related educational activities, animal interactions, visits from special guests, field trips, and more. Campers also unleash their big hearts by completing service projects to benefit the animals of the Animal Humane Society.

 

Registration is currently open, with many seats still available at AHS’s Buffalo and Woodbury facilities. Register today to unleash the compassionate animal advocate in your child.

Saluting Our Veterans on Memorial Weekend

WHAT IS A VETERAN?

A veteran is a person who fell in love with their country – for better, for worse – for richer, for poorer – in sickness and in health.

 

A veteran is a person who will lay down their life for the Statue of Liberty so that her poor, her huddled masses, her homeless, her tempest tossed may breathe free and may enjoy life, liberty and the pursuit of happiness.

 

A veteran is a person who does what he or she must- in spite of personal consequences- in spite of obstacles and dangers and pressures- for that is the basis of all human morality.

 

A veteran is one who gets a lump in their throat when they see our beloved flag. One who will fight to protect that flag from those who dare to dishonor it.

 

A veteran  is one who pays their taxes, willingly; serves their country , honorably;  and cherishes their freedom, passionately.

Maria Sue Chapman Remembered One Year Later

Prayer for Patience

Heavenly Father, Help us remember that the person who cut us off in traffic last night is a single mother who worked nine hours that day and is rushing home to cook dinner, help with homework, do the laundry and spend a few precious moments with her children.

Help us to remember that the pierced, tattooed, disinterested young man who can’t make change correctly is a worried 19-year-old college student, balancing his apprehension over final exams with his fear of not getting his student loans for next semester.

Remind us, Lord, that the scary looking bum, begging for money in the same spot every day (who really ought to get a job!) is a slave to addictions that we can only imagine in our worst nightmares.

Help us to remember that the old couple walking annoyingly slow through the store aisles and blocking our shopping progress are savoring this moment, knowing that, based on the biopsy report she got back last week, this will be the last year that they go shopping together.
Heavenly Father, remind us each day that, of all the gifts you give us, the greatest gift is love. It is not enough to share that love with those we hold dear. Open our hearts not to just those who are close to us, but to all humanity. Let us be slow to judge and quick to forgive, show patience, empathy and love.
